Calling all procrastinators! You won’t find any judgement here when it comes to meal planning procrastination. If you’ve put off your Thanksgiving appetizer plan, I get it. There’s so many moving parts that go into a big meal that it’s easy for apps to go by the wayside which is exactly why I love this option: It’s quick and easy to throw together AND it is so stunning that no one will ever guess you added it to the menu last minute.

I am not a fan of beets, but this Beetroot Hummus recipe recipe is AMAZING. Nutrient dense beets provide your family with a healthy dose of magnesium, iron, folate and fiber while the chickpeas are loaded with vitamin A, C, and E. Stay healthy through the holidays? Check!
Since we have to abide by a gluten-free diet (gluten sensitivity and autoimmune disease runs in the fam), we serve ours up on gluten-free crackers, cucumbers, and carrots. But if you’re not limited by dietary restrictions, this would be amazing on traditional pita bread too!
How we’ve enjoyed this dish:
- As an appetizer as indicated above
- As a condiment on a sandwich with leftover turkey/chicken, spinach, tomato, and sprouts.
