Pork or Tofu Fried Veggies

In the summer, I tend to avoid cooking rice. Perhaps it’s because we don’t have a rice cooker, and standing over a hot stove doesn’t appeal to me. Or maybe I’m just on the lookout for any shortcuts to spend less time in the kitchen, especially since summer in the Midwest is precious. Idk. 🤷🏼‍♀️

What I do know is that you’re going to want to try this delicious (but easy AF!) dish. You’ll have to let me know if it becomes a staple in your home too!

Ingredients

  • 2 tbsp avocado oil
  • 1 lb pork tenderloin or extra firm tofu chopped into 1/2-inch pieces
  • 2 tbsp sesame oil
  • 2 tbsp tamari
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 tbsp sesame oil
  • 1, 12oz bag of frozen peas and carrots
  • 1, 12oz bag of frozen cauliflower rice
  • 4 large eggs, lightly beaten
  • 6 stalks of green onion, chopped (or snipped with kitchen sheers 😉)
  • Hoisin sauce to taste (stay tuned because I’m working on a homemade hoisin-inspired sauce that uses natural sugars and is gluten, dairy, soy, nut, and corn free, unlike the store-bought brands)
  • siracha to taste (or your favorite Tabasco etc.)

Directions

  1. Heat oil over medium heat. Add chopped pork or tofu and cook through, flipping occasionally (approximately 8 minutes for pork and 12 minutes for tofu). During the remaining two minutes of the cooking, remove the pan from heat and drizzle sesame oil and tamari over the protein. Return to heat to finish cooking.
  2. Drain excess liquid and transfer protein to a plate.
  3. In the skillet, add garlic, ginger, and sesame oil. Cook 1-2 minutes, until fragrant.
  4. Add frozen cauliflower rice, peas, and carrots.
  5. Cover and cook until soft, 5-10 minutes. Stir and break apart clumps occasionally.
  6. Uncover and push the cauliflower mixture to one side. Add eggs and scrape from the bottom frequently until eggs are mostly cooked through. Mix in green onion and pork/tofu.
  7. Serve with a drizzle of hoisin sauce and hot sauce.

How Ours Turns Out

I wish I had a better photo to communicate just how delicious this recipe is, mainly because, in this one, I lost track of time and overcooked the pork. 😬 It was still tasty, though! It’s such a hit we eat the five servings between the two of us (multiple meals in a week).
